Vegan Overnight Oats Recipe

Hi BB’s!!!! ♥ If you follow me on Instagram then you’ve probably seen this bowl of vegan overnight oats that I keep posting about 😉 This has been my go-to breakfast on the mornings I do fasted cardio (I do Rise Nation 3x a week early in the morning!) It’s perfect to prep the night before and I make enough for 2 meals each batch so I have it ready to go! Oats are rich in nutrients like fiber, carbohydrates, plant-based protein, and B vitamins; this makes it a powerful meal for gut, heart, and brain health! I like these specific ingredients as they are CLEAN!…organic, gluten-free, no added sugar (or other junk additives) vegan, plant-based and I like that these oats are sprouted! Why sprouted? Sprouted grains increase many of the grains’ key nutrients, including B vitamins, vitamin C, folate, fiber, and essential amino acids often lacking in grains, such as lysine. I’ve also found for myself personally that sprouted grains are easier to digest! Yay! The combination of this bowl is what makes it stand out: it is easy to digest, tastes amazing and is PACKED with good for you whole foods! It’s honestly one of my favorite new meals I came up with for PROJECT COMEBACK, I honestly look forward to the mornings I eat it! Lately I have been obsessed with pomegranate seeds, but I also love adding papaya too! Pomegranate seeds are full of antioxidants, are rich in Vitamin C, potassium, and fiber! Papaya is GREAT for digestive health, and is also rich in fiber, Vitamin C and antioxidants (among other things!) Chia seeds are also loaded with antioxidants, fiber, protein, omega-3 fatty acids and various micronutrients. On occasion I’ll add in some activated walnuts from Moon Juice but it is an occasional additive for me because I try to not consume too many nuts (too many nuts make my skin break out!)


Ingredients for vegan overnight oats:

1/2 cup of sprouted organic rolled oats

1 TBSP. organic chia seeds

1 cup of organic nut milk (I like almond or hemp!)

organic pomegranate seeds

cinnamon

vanilla creme stevia

Activated Superfood Banana Hemp Granola


Instructions:

*This recipe yields 2 portions!

  1. Combine 1/2 cup of sprouted organic rolled oats + 1 TBSP. organic chia seeds + cinnamon in a jar that has a sealing lid
  2. Add 1 cup of organic plant-based milk – I either like to make my own hemp milk (click here for the recipe!) or if I am going to use almond milk my favorite brands (which have the cleanest ingredients I have found) are MALK Organics and The New Barn!
  3. Mix plant-based milk + stevia + your dry ingredients together, seal the jar and place in the fridge overnight (or for at least 5 hours!)
  4. When you’re ready to eat your oats top with pomegranate seeds from some antioxidants and anti-inflammatory benefits (I buy mine at Trader Joes and it makes it really easy!) + sprinkle some Activated granola (or your favorite granola!) on top for some extra protein and crunch!
