Hi my babes! Just popping on here quick to share this amaaaaazing recipe with you. Today’s post is short, sweet and to the point! I’m sharing my go-to high in vegan protein dish that I frequently meal prep to have on hand! This vegan chicken salad recipe is one of my all-time favorite vegan dishes to make!!! It’s so simple (legit takes less than 10 minutes to throw together!) and it’s PERFECT for meal prep and on the go! This recipe yields about 3 servings (depending on your portion size .) and each serving is roughly 300 calories with about 10g of PLANT-BASED PROTEIN!

1 can organic chickpeas
1/4 cup vegan mayo
1.5 cups chopped celery
2/3 cup chopped onion
2 tbsp slivered raw almonds
1 TBSP vegan dijon mustard
Poultry seasoning
Salt + pepper
Juice of half a lemon
