Hi bb’s! It is poooouring rain here in LA today (I kind of love it honestly!) so I thought today would be a good day to not only make one of my favorite soups, but also finally share the recipe with you! Like I said on Instagram:Ā I am a soup girl through and through, rain or shine, I LOVE SOUP! I tend to gear towards warm foods so I love a good broth and/or soup; plus they are great to put in a mug and take on the go! Speaking of on the go: I started BBG again today and accidentally spent 3 hours at the gym this morning lol.. ok you’re probably wondering HOW I did that and what the heck I was doing all morning: first I took a yoga class, then I walked on the treadmill for a bit while I answered some emails and DM’s, and then I did BBG 1.0 day 1 legs! I had some time this morning so I took my time at the gym and it was so nice to not feel in a rush! However, by the time I left it was noon.. and I was starving.. and needed to get my booty home to work.. so I wanted to whip up something warm and comforting that was also quick and easy that I could easily enjoy while working, and my vegan carrot ginger soup was the perfect thing to make! š
4 cups of peeled and choppedĀ carrots
3 cups low sodium vegetable broth
3 TBSP.Ā avocado oil or olive oil(or another cooking oil of your choice)
1/2 of an onion, peeled and diced
1/4 cup fresh ginger, skin off and minced
Himalayan pink salt and black pepper to taste
optional: top with fresh parsley or your favorite herb!
